Carob Fudge, All Natural, and Fun Finds with new Products

Carob Fudge is a great treat. My mom will make a lot (especially at Christmas) and wrap individual fudge squares in wax paper and stores them in a jar! Tastes just like fudge but made with all natural ingredients.

Today I made mine with peanut butter, but my mom favors tahini. Both ways are great! Tahini (sesame seed paste) in Hawaii is like buying gold, so I opted for the cheaper version of this recipe. Let me know what your favorite is!

For those of you who are unfamiliar with carob powder, it is very similar to cocoa powder but some consider it slightly healthier and it does not contain any caffeine. Oooey Gooey S’more Ice cream Bars tastes like a chunk of heaven. My mom use to make these golden graham ice cream bars  for an after school snack- on a very good day! She did the same thing with rice krispy treats- which are just as amazing and freeze well (S’more bars do not freeze too well-best to make ice cream bars and eat right away).

Hawaii has a lot of fascinating treats that you may not know about until you’ve ventured away from the traditional tourist destinations. Some of these specialties include Malasada’s, Musubi’s,  Manapua’s and the beloved Butter Mochi!

I love Butter Mochi! It is naturally gluten free, which makes me even more fond of this discovery. You can find this local treat everywhere around Hawaii. Lucky for us, my friend Rena, who is from here, has an awesome Butter Mochi Recipe that she is sharing with us today! Rena is an amazing cook/baker! Everything I have had of hers is fantastic, and so I will probably be posting some of her recipes in the future; like her shoyu chicken-mmm to die for!

GF Apple Cake with Brandy Sauce and Versatile Blogger Award!

First of all, Tawny, Thank you for sharing your story.You are such an amazing person. The way you handle life’s bumps is done with such finesse and balance. From an outsider, it looks like you have it all- you are beautiful, you have a wonderful family, friends, your talented and you would never know that your life has anything but perfect in it- it is only because you handle the unexpected so positively, your prospective is so consistently clear and somehow you are so wise! You have seen a few dark days in your life and you have risen above everything and remained such a shining light. You are a wonderful example- I know you so well, and I can truly say you are genuine, and in every category purely amazing! – I admire you to the fullest.You melt my heart and I am so blessed to have you as a friend!! And I mention this on here because this is a girl you want to stick by! She is amazing, and she has so much to offer!

I use to compete in Tahitian Dance!

I lived just out side Bordeaux, France for a year to study the Language and his is now my dream destination to live and be!

I spent a summer in the Amazon doing volunteer work building houses.

My favorite drink is a green tea frappe from Starbucks

I love anything adventurous and am down for pretty much anything anytime.

My hair almost touches my butt right now.

I have been made fun of my whole life for unknowingly making up my own words!

I come from a family of 7 kids, and married into a family of 7 boys!

My husband and his family own a mom and pop + 7 boy restaurant on the North Shore, Hawaii- Kahuku Grill.

I drink hot chocolate most every day with cereal on top- a habit I never grew out of I suppose!

My BA is in teaching English as a second language, yet I don’t think I could learn a language my self  shhhhh…

I have taught English in Korea a couple of times, Hawaii, Canada, and Italy.

I am a dreamer, and I constantly look at airline tickets online and look for an excuse to plan a trip!

When I was in Elementary school I use to walk to school on top of the snow banks (in Saskatchewan) in the dead of winter, dreaming about Hawaii, looking at the sun thinking, “wow that is the same sun in Hawaii. And now I live and married here! –I believe in dreams! Click here to Read More

Date Squares (both regular and gluten free)

It’s a tradition in our family that date squares must be the Catudal men’s favorite dessert. Not a bad tradition. Originally made lovingly by Evangeline Aucoin Catudal for her husband Jacques. Next in line was Susan who made them for Jacques’ son Pierre. Then it was my turn to learn the magical recipe, Susan passed on the knowledge so I could make them for Pierre’s son Philip. My Phil. If I don’t regulate, Phil can eat the entire pan to himself in one day. We know this because it’s happened before.

Croissant French Toast Stuffed with Nutella and Topped with Toasted Coconut and Bananas

I know, it looks a little intimating! Maybe it is because I took a short cut, and bought the croissants and they were the size of my head. Don’t let this fool you! With smaller croissants, this has the ability to morphing into something beautifully delicate! But hey, if you like the ‘go big or go home style’ them this ones for you! This… thing… is a croissant- french toasted and stuffed with nutella and topped with fresh whipped cream,  toasted coconut, sliced bananas and chocolate shavings! This was insane! Crepes: Traditional and Gluten-Free

The question is, can a crepe be gluten-free? I say, of course it can! As long as you understand what needs to happen to your batter to get a good crepe, and with the abundance of alternate flours our there, it’s possible to get a satisfying “paper pancake” without the gluten.  However, not everyone out there is gluten-free and mastering the traditional crepe is a great skill to acquire.  Today I want to share both recipes, I feel it’s best to understand the original to get the alternate versions just right. With a little practice you’ll get the hang of it, and it seems to impress family and guests though it takes little effort!

Crepes are such a staple in France they’ve taken to calling the holiday which celebrates the return of Spring (“La Chandeleur”) as “Crepe day.” On this day if you wish for good fortune all year, toss the first crepe of the batch, usually a dud anyhow, on the top of your kitchen cabinets and leave it there all year!  My dud-crepe is sitting atop a cupboard as we speak gathering a load of dust and good luck for my family. This is a new thing for me…quinoa for breakfast- hmmm. I can’t have oatmeal or cream of wheat and most rice doesn’t have much nutritional value, but quinoa- is gluten free and as an extra bonus- it is considered a “superfood”. Why not incorporate it into the a.m! I decided to give it a try and play around with it. The end results was more pleasing than I had anticipated and my son loves it too-so this is definitely a keeper- Warm Cocoa Quinoa with Toasted Hazelnuts, Dried Fruit, Fresh Raspberries with a dollop of Greek Yogurt. Sopapilla Cheesecake with a Drizzle of Honey

This is the easiest/tastiest thing you will ever make! I could hardly believe the recipe the first time I heard it. My gorgeous sister-in-law Jenni, gets all the credit for this one! She claims she doesn’t know how to cook or bake, but everything that comes out of her kitchen is mouth watering goodness! She will deny it… but it is undeniably true.

Her husband is actually the one who inspired me to try cheesecakes! When they lived out here in Hawaii, he mastered the art of cheesecakes. Not a typical hobby of a man, especially not one who is about as masculine as men come… but somewhere in that tall dark and handsome and intimating man of a man, there was this dainty cheesecake creator! He would come to family gatherings carrying a perfectly prepared cheesecake with ribbon frosting, and  basically a trail of turtle doves followed closely behind him. Dark Chocolate Pudding – Gluten and Diary Free

What do you get when you take a woman born and raised in North London, who then gets married to a dashing French Canadian, and put her in Montreal to raise a family (of four health fanatic children)? You get a very cultured and very natural food expert.

You also get my mother-in-law.

She goes by Nanny in our family, and she is always full of inspiration and fresh ideas. She’s also always full of wit and confusing old British expressions that no one understands… even her own children. “Oh well, it’s horses for courses I suppose!”  (figure that one out!) One of my favorite recipes from her is a dark chocolate pudding. I prefer to have it warm off the stove as I curl up at the end of a day on the couch to watch our nightly shows. However it’s also just as satisfying and heavenly eaten cold from the fridge as a middle of the day snack.
