Croissant French Toast Stuffed with Nutella and Topped with Toasted Coconut and Bananas

I know, it looks a little intimating! Maybe it is because I took a short cut, and bought the croissants and they were the size of my head. Don’t let this fool you! With smaller croissants, this has the ability to morphing into something beautifully delicate! But hey, if you like the ‘go big or go home style’ them this ones for you! This… thing… is a croissant- french toasted and stuffed with nutella and topped with fresh whipped cream,  toasted coconut, sliced bananas and chocolate shavings! This was insane! The texture, the taste, the everything! This is something that is a must try at some point in your life!

I was trying to create something that was my mom… I don’t think I quite accomplished that… but the idea was based off of her favorite indulgence – a glazed croissants- something you can not find anywhere in Hawaii. I thought that a Croissant dipped in French Toast batter would help get the consistency of a glazed croissant, and then stuffing it with nutella and topping it with bananas, whipped cream, toasted coconut and chocolate shavings would put anyone into a trance enough to totally forget that glazed croissants exist!  At least that was the idea. It did turn out unbelievably though! You really can’t go wrong with these ingredients. Tama was a great help too! His words, “this one isn’t pretty-its awesome! ” (The pound cake one was “pretty”)… Oh Tama, I think you nailed it on the head!

Ingredients
  • 4 croissants
  • • 3 large eggs
  • • ¼ cup coconut milk (normal milk or cream works too)
  • ¼ cup cream or milk
  • • ½ teaspoon pure vanilla
  • • ½ teaspoon cinnamon
  • • enough nutella to spread a decent amount for stuffing
  • • Garnishes
  • • whipped cream
  • • powdered sugar
  • • toasted coconut
  • • chocolate shavings
  • sliced banana

Instructions
  1. Instructions for Stuffed French Toast
  2. Mix eggs, cinnamon, vanilla, coconut milk and cream or milk together, with a whisk or fork.
  3. Once combined, slice the croissant in half and dip quickly (very lightly) on both sides into the batter.
  4. On Medium Heat, melt a dollop of butter.
  5. When butter is melted, add the battered croissant sliced side down and cook for aprox. 4 minutes or until golden brown. Flip and cook for another minute- its should be golden.
  6. Once done spread one piece with Nutella
  7. Sandwich the two croissant pieces together.
  8. Repeat this process to create as many stuffed French toast as you want.
  9. Garnish with Whipped Cream, sliced banana, powdered sugar, toasted coconut, and chocolate shavings.
  10. To Toast Coconut…
  11. Put desired amount of coconut in a saucepan that is heated to medium. Stir around to prevent burning. When the coconut starts to brown and give a scent you know it’s done!
