There is something so refreshing about cold sweet cucumbers. With spring here, and summer just around the corner, hot summer days are on their way! This salad is so light and refreshing you could eat it all day long! It looks fancy dancy but it is so simple and quick to prepare. If you have good ingredients it does not take much to create fresh bold flavors which this salad is a living testament of. I am telling you, once you try this salad it will become a staple quick fix healthy option. Some days I prepare a big bowl (usually I slice my cucumbers) and have it ready to snack on through out the day. It keeps really well, and it is as refreshing as a cold fruit smoothie or glass of lemonade. Another Bonus is that it is definitely a great ‘figure friendly snack’ for the ‘yellow polka dot bikini season!’ Don’t feel sabotaged if I post something like a cheesecake right after this though…
The only tool you need is a normal house hold potato peeler and if you don’t want ribbons you can always slice or dice the cucumbers too.
- 1 lb thin skinned cucumbers (ex: Persian, Armenian, English or Japanese cucumbers), thinly sliced, diced or ribbon.
- ¼ red onion, thinly sliced and cut into 1-inch long segments
- 2 or 3 red radishes, thinly sliced
- 10 mint leaves, thinly sliced
- ¼ Cup White vinegar, or rice wine vinegar
- 3 Tablespoons Olive oil
- 2 teaspoons lemon juice
- 1 teaspoon salt
- ¼ teaspoon dill (optional)
- Salt and freshly ground pepper
- In a medium sized bowl, gently toss together the sliced, diced or ribbon cucumbers, red onion, radishes, mint leaves with a vinegar and olive oil, lemon juice, dill, salt and pepper to taste.
- Suggestions: ¼ cup Feta Cheese is a great addition. Add right before serving. Using a Greek Salad Dressing is a tasty and quick dressing alternative or adding a ⅛ cup of sour cream or ⅛ cup Greek yogurt makes for a great tasting creamy version.
- Note: To Ribbon cucumbers, lay the cucumber flat on the counter and slide a potato peeler down the whole side creating thin beautiful ribbons. Applying a little pressure helps. Continue until you have reached the seeds and then flip and continue on other side. How easy is that! Bella!
- If dicing, cut cucumber in half- length wise, and remove seeds with a spoon before dicing.
