Happy Mother’s Day to every woman out there! Whether you are a mother now or one day will be, every woman out there is a mother to someone- somehow. What a special day to embrace womanhood and reflect on the gift that it is.

On the menu today we  have a heavenly Blueberry Pound cake French Toast Stuffed with Blackberry Cream cheese and Topped with Fresh Whipped Cream, Blackberries, and Shredded Coconut.

Mini Italian Quiche…

and an exotic Croissant Stuffed French Toasted Stuffed with Nutella and Topped with Whipped Cream, Sliced Banana, Shredded Coconut, and Chocolate Shavings!

This day is especially exciting for me this year, because I found out recently, that I am expecting number two! Her name is Ciel, because I feel it will be a girl and that is the name my husband and I have gravitated towards since we met!

And Mom, Happy Mother’s day to you! I want to share a little about my mom because she is a perfect example of the perfect woman and mother. She has nothing but pureness and sweetness running through her veins.

I can honestly say, I have never heard her say an unkind word about anyone or anything. She is beyond a normal state of kindness. In fact she is so kind, it used to bother me at times growing up! I would complain about someone at school or a teacher, and she would just say, “well maybe….”, “it could be that…” And go on and stick up for the underdog, and give a reason for the situation.

I now look at that quality and marvel. My sister is the same way- an exact replica of my mom in these traits. Gee wiz… what went wrong with me- I am definitely more defiant and dramatic by nature! I have a lot to work on… but I am so thankful for the loving and supportive mother I have, to whom I cannot express enough how much I value her in my life, and everything she has done for me throughout my life and the constant example she is to me and everyone around her. 

Mom, you are kind, you are beautiful, you are enduring, you are quirky and funny, you are talented, you are full of love, you are an example of all things good and I love you.

Thank you mom for being you and bringing so much happiness into my life!  I am grateful for you, and all that you have done in my life. I think I didn’t realize this and took it for granted many many times. Having a child of my own has opened my eyes a little to just how much you do- that times 6 more kids-you really are incredible, and if I can end up a tenth of what you are  I will be one happy lady.

I wish I was there to make you breakfast! I know growing up, it was probably always egg in a hole that we made most years, but I am getting more exciting in the kitchen and came up with two stuffed french toasts that are inspired by you! Can you tell how?! And those who want a more salt and savory than sweet we have mini quiche!
