Okay, all I am going to say is that these are the easiest most delicious crock pot taco’s on the market! They are awesome. I have shared this recipe with all my friends and its one that gets used time and time again! I found it on the net a few years back and I thank the dear person who posted it… If only I could remember where that was!

This can feed a crowd for pennies, makes great left overs and is an all around winner on flavor, budget and time! I am in a whirl wind of things going on so throwing this meal together by plopping the ingredients in in the morn., and let the crock pot do its thing, made for a special, yet extremely easy dinner that night!

I can’t believe I am moving off this rock-permanently-ahhhh- in a couple of days!! I’m off to Canada for a couple weeks for a family visit before we are off to our new life in France! Life is full right now of a million little things that come along with any kind of move, and pregnancy and all that life has to offer!  I wonder if life will ever slow down. Does it? I have a feeling it wont for the next 20 years… I am guessing the more kids you have the more whirlwind your life becomes? It’s all so very exciting the thought of growing a family, finding a future, but honestly right now… my dream is to climb into a big comfy white bed with fluffy pillows, in an air conditioned room and sleep for 3 days! Give me three days and I will be back , and at it and full of life-promise.  Actually just give me a bed! We have been sleeping on a blow up for three months now. Don’t ask why! Any real bed sounds like a cloud. But enough rambling from me, what I came here to say is, Sweet Pork Tacos with Slaw and Avocado….do it- you wont be disappointed.

Sweet Pork Tacos with Slaw and Avocado

Ingredients
  • Roasted Sweet Pork
  • about 6 pounds Pork butt/shoulder ( you can use less if you want)
  • 1 19 oz. can Red Enchilada Sauce
  • 1 can Coke
  • 2 tsp. Chili Powder
  • 1 tsp. Cumin
  • 1 tsp. salt
  • 1 Clove Garlic or 1 tsp. Garlic Powder
  • 1½ c. Brown Sugar
  • ½ onion, chopped
  • ¼ cup fresh cilantro, chopped
  • toppings, diced avocado, and thinly sliced cabbage and a squeeze of lemon or lime!

Instructions
  1. Throw all ingredients in your crockpot and let it do its magic! (I set mine for 10 hours). Use two forks to shred the pork by pulling it apart.
  2. Then she placed the meat on top of a tortilla (we used grilled corn tortillas…….but I’m sure flour would be good too) and then the cabbage and avocado and whatever else you want on top of that.
  3. Fold and devour. Use the left overs for burritos, nachos, sandwiches, on top of rice! You can use the left overs in so many ways.
  4. It freezers well too.

    Tacos are a staple at our house and are eaten almost weekly. I can’t wait to try this one! I love sweet pork. and the cabbage looks so much more delicious than shredded lettuce!
