White Chocolate Chip Cake Box Whoopees with Peanut Butter Filling

My neighbor gave me this awesome recipe for Lemon Cake White Chocolate Chip Cookies which were a huge hit at my nephews birthday party. I don’t think any of the kids got a taste because they were inhaled by the adults before they made it to the table.  I will make sure to make a posting of this variation very soon.

Cake cookies are beauties because they are so simple and quick! They are soft and chewy and you can get as creative as you like. I have heard of Carrot Cake Cookies too which might be the next best thing. I will have to try those out and let you know if they make the cut!

These ones were something my son and I created together. If you have never made Cake Box Cookies you are in for a treat. I promise these will become one of your go-to- recipes when you need to whip up a treat in a hurry but still want to impress!

White Chocolate Chip Cake Box Whoopees with Peanut Butter Filling

Cookie Ingredients

1 Box Chocolate Cake Mix (your choice)

1/2 cup canola oil

2 eggs

1 cup white chocolate chips

Directions

Pre-heat oven to 350 degrees

Mix together cake mix, oil & eggs.

Add white chocolate chips.

If you want to fancy them up a bit… roll spoonfuls of cookie dough in white sugar and then in confectioners sugar before placing on cookie sheet (This is how I like them!)

Place uniform spoonfuls on greased cookie sheet and bake approximate 8-10 minutes.

Peanut Butter Filling

½ cup Peanut Butter

¼ cup Cream Cheese

¼ cup Confectioners Sugar

1 teaspoon Vanilla (optional)

Directions

Cream together peanut butter, cream cheese, sugar and vanilla until well blended. When cookies are cool take one and spread 1-2 teaspoons (depending on how you like yours) on it and sandwich with a second cookie. There you go you got your self one hefty scrumptious whoopee!!

 

These make great “normal” cookies if you don’t want to “whoopee-i-fy them”!

    Andrea – your pictures make my mouth water! All this baking of yours reminds me of way back when, at your house in Emerald Pk – you were teaching me how to make gluten-free crepes! You were always so creative… keep up the good work! xo
